Peach Cake

Cake

  • 1 Cup Butter
  • 2 Cups Sugar
  • 3 Eggs
  • 3 Cups Flour
  • 2 Teaspoons Baking Soda
  • 3/4 Cup Fresh Peach Juice
  • 2 Cups Mashed, Peeled Peaches
  • 2 Teaspoons Cinnamon

Cream butter and sugar. Add eggs one at a time, beating well after each addition. Stir together flour and soda; add to batter alternately with peach juice and peaches, beginning and ending with flour. Mix cinnamon. Pour batter into 3 greased and floured cake pans. Bake at 350 degrees for about 30 minutes or until a toothpick inserted in center comes out clean.

Cream Filling

  • 2 Tablespoons Flour
  • 1 Cup Whipping Cream 1 Egg
  • 1 Cup Sugar
  • 1/2 Cup Butter
  • 1 Teaspoon Vanilla

Whisk all ingredients together in medium saucepan. Cook until soft and creamy, whisking constantly. Allow to cool completely before assembling.

To serve, spread Cream Filling between layers. Spread whipped cream over top and sides of cake.
